Ingredients for Vegetable Poha Recipe-
- Poha (Good quality)- 2 cups/100 gm
- Water- to soak poha
- Oil- 2 teaspoons
- Cumin seeds- 1/2 teaspoon
- Mustard seeds-1/2 teaspoon
- Turmeric powder-1/2 teaspoon
- Salt- To taste
- Onion- 2 medium size
- Green chilly - 2
- Capsicum-1 medium size
- Carrot-1
- Peanuts-1/2 cup
- Lime juice-1 teaspoon
- Soak Poha in water for 30 seconds and then drain and squeeze out water from Poha.
- Chop onions, chilly, carrot and capsicum.
Method
- Heat oil in a pan and put cumin seeds, mustard seeds, chilly and saute until they crackle.
- Now add chopped onions, capsicum, carrots and cook on high flame for 2 minutes.
- Now add turmeric powder, salt and peanuts and saute for a minute.
- Add Poha and stir.
- Keep it on low flame for 3-4 minutes.
- Let it cool for sometime and then add lemon juice and serve.
