Phirni is a creamy sweet pudding made with rice, milk, sugar and cardamom. It tastes really well when flavored either with rose essence or saffron. The procedure to make Phirni is similar to Rice kheerRice kheer is made from whole rice whereas Phirni is made from powdered rice. Phirni is made on special occasions(Karwa Chauth) in punjabi familes. Let's see how to make this delicious Punjabi dessert.

Rice Phirni Recipe



Ingredient



  • Full cream milk: 1 ltr
  • Basmati Rice: 1/2 cup
  • Sugar: 3/4 to 1 cup
  • Almonds:15-20
  • Cardamom Powder:1/4 tsp

Preparations

  • If you are using saffron: Take 1 tbsp of lukewarm milk and add saffron strands and keep aside.
  • Add almonds in hot warm water until almonds become warm. Then peel them and slice.

Method

  • Rinse rice 3-4 times in water and soak for 30 minutes.
  • After 30 minutes drain and spread rice on a clean kitchen towel to let them dry properly.
  • Now grind the dry rice in a grinder to a fine powder.
  • Take 1 cup cold milk in a bowl and mix grounded rice powder to make a paste and keep aside.
  • Take a thick bottom pan and heat rest of the milk in it.
  • After a boil add rice paste to milk and turn the flame to slow.
  • Keep stirring continuously.
  • After the milk is reduced and the rice is almost cooked add sugar,saffron mixture and cardamom powder. Mix really well. 
  • Once Phirni is done. Pour it in serving bowls, garnish with almonds.
  • Refrigerate it and serve cool.
