Nankhatai is a shortbread cookie from India. Traditionally nankhatai is made using Refined flour(maida), semolina(suji) and gram flour(besan) and is flavored with cardamom powder. Today we will learn how to make  nankhatai that melts in the mouth.

How to make nankhatai in convection microwave oven

Ingredients: Measurement 1 cup=150ml

  • Refined flour/Maida: 1 cup
  • Gram flour/Besan: 1/2 cup
  • Semolina/Suji: 1/3 cup
  • Powdered Sugar: 1 cup
  • Ghee: 1 cup
  • Baking Powder: 1 Tsp
  • Cardamom powder: 1/4 tsp

Method/How to make Nan Khatai

  • Pre-heat your oven at 200 deg cel for at least 10 minutes.
  • Sieve all purpose flour/maida, semolina/suji, baking powder, cardamom powder twice so that all the ingredients get mixed well.
  • Take ghee in a bowl and add sugar. Now beat ghee and sugar with the help of a hand blender or electric beater till it turns fluffy.
  • Now add sieved dry ingredients, mix well and make a soft dough.
  • Take small portions from the dough and make small balls. Grease your baking tray with ghee and place these balls on it and press gently to flatten them.
  • Place in oven and bake in convection mode at 180 deg cel for 10 minutes. After 10 minutes check nan-khatai, then bake again for next 3-4 minutes.
  • Take out baking tray from oven and let your nan-khatai cool for 10-15 minutes.
  • You can store nan-khatai in an airtight container for at least 2 months.
