Vegetable Poha Recipe

Ingredients for Vegetable Poha Recipe-                                                   

  • Poha (Good quality)- 2 cups/100 gm
  • Water- to soak poha                    
  • Oil- 2 teaspoons                           
  • Cumin seeds- 1/2 teaspoon         
  • Mustard seeds-1/2 teaspoon       
  • Turmeric powder-1/2 teaspoon     
  • Salt- To taste                                 
  • Onion- 2 medium size                   
  • Green chilly - 2
  • Capsicum-1 medium size                 
  • Carrot-1
  • Peanuts-1/2 cup 
  • Lime juice-1 teaspoon
Preparations-
  • Soak Poha in water for 30 seconds and then drain and squeeze out water from Poha.
  • Chop onions, chilly, carrot and capsicum. 

Method

  • Heat oil in a pan and put cumin seeds, mustard seeds, chilly and saute until they crackle.
  • Now add chopped onions, capsicum, carrots and cook on high flame for 2 minutes.
  • Now add turmeric powder, salt and peanuts and saute for a minute. 
  • Add Poha and stir. 
  • Keep it on low flame for 3-4 minutes.
  • Let it cool for sometime and then add lemon juice and serve.
