Gajar ka Halwa is one of my favorite desserts. When the winters are on the peak, and you see juicy carrots everywhere is the vegetable market or stores. Without giving a second taught buy a  good amount of carrots and make this delicious dessert at home. Gajar ka halwa recipe is simple and requires fewer ingredients. Though the process takes a bit of your time, the results are worth. Let us see how to make Gajar ka halwa at home.


Ingredients for Gajar Ka Halwa Recipe-

  • Red and juicy carrots- 9-10 medium sized
  • Full cream Milk- 1 cup
  • Sugar- 1 cup 
  • Cardamom powder- 1/2 tsp
  • Khoya/Mawa- 100 grams
  • Dry fruits-
    • Raisins- 14-15
    • Almonds- 10-12(chopped)
    • Dry coconut(Grated)- 2 tbsp
Preparation For Gajar Ka Halwa-
  • Buy good quality carrots. 
  • Wash them properly.
  • Peel and grate the carrots, either with a hand-held grater or in a food processor.
  • Remove stems of raisins.
  • Chop almonds.
  • Grate Coconut.

Method for Gajar Ka Halwa Recipe-

  • Put a heavy bottom pan on the gas stove. Add all grated carrots in pan and saute for 5 minutes.
  • Pour milk in the pan. Cook grated carrots in milk on medium flame. Stir occasionally. 
  • Milk will start reducing slowly. Now, stir constantly, Keep scraping the sides of the pan to remove the evaporated milk solids and add the milk solids to the cooking mixture. Cook until carrots soak the milk and become softer. 
  • Next add sugar and cardamom powder, stir and cook on low flame until all the moisture is absorbed. 
  • Next, add all dry fruits and khoya/mawa to the halwa and stir. Your lip-smacking delicious Halwa is ready.
  • Take it out in a serving dish. Garnish with raisin, sliced almonds, and grated coconut
  • Serve, Eat and Enjoy..:)

Note:

  • You can also add ghee/clarified butter after adding sugar if you want.
